These were two different burritos on consecutive days. I fried the eggs in a tiny one egg pan which makes for a really neat presentation.

Extra modified “crack wrap” - same as the last one only with an added hard boiled egg. Great addition! Carrot and celery on the side (Home meal)

Quick and easy recipe:

Prep: Put wooden skewers into a tray of water to soak. Pre heat grill/broiler or barbecue to medium-hot temperature.

1. Cut paneer cheese into cubes
2. Mix paneer with a tikka spice paste in a large bowl
3. Chop onions, bell pepper and mushrooms into large pieces and mix in with the paneer
4. Allow to marinate for an hour or two if you can wait, but it’s ok to use straight away if short on time
5. Put veggies and paneer on the skewers
6. Grill/broil/BBQ for 5-10 mins, turning several times, until everything looks evenly browned

Mac ‘n’ Cheese burrito – with fried potatoes & chili aioli (Hot Beans, Toronto, Canada)

I had to go back to Hot Beans to try this burrito. I saw them making it on my first visit and it looked like my dream food combination. Sadly in execution it lacked cheesy flavour and was verrrry dry and stodgy. I couldn’t even finish it. Perhaps I need to make my own version at home…
